About the Recipe
I love ice cream and always have. I would say that my favorite summer activity is to get a scoop or two of ice cream, sit on a bench, and watch the sunset over the ocean. There is nothing like cold ice cream on a hot day, or for me at least, a cold day too.
I bought my ice cream maker in the dead of winter and started making it right away. These are my top 3 flavors that I have made, but I am experimenting with more.
Now the question everyone asks, "What is your favorite ice cream?" I would say a toss-up between Moose Tracks and Mint Chip.

Ingredients
Vanilla Ice Cream
1 can (300 mL / ~1 cup) sweetened condensed milk (300 g)
2 cups heavy cream (35%) (480 g)
1 cup whole milk (240 g)
1 tsp vanilla extract (5 g)
pinch of salt (~1 g)
Mint Chip Ice Cream
1 can (300 mL / ~1 cup) sweetened condensed milk (300 g)
2 cups heavy cream (35%) (480 g)
1 cup whole milk (240 g)
1 tsp peppermint extract (5 g)
pinch of salt (~1 g)
1/2 cup chocolate chips or finely chopped chocolate (85 g)
S'mores Ice Cream
1 can (300 mL / ~1 cup) sweetened condensed milk (300 g)
2 cups heavy cream (35%) (480 g)
1 cup whole milk (240 g)
1 tsp vanilla extract (5 g)
pinch of salt (~1 g)
1 cup mini marshmallows (50 g)
3/4 cup graham cracker pieces (75 g)
1/2 cup chocolate chips or finely chopped chocolate (85 g)
Preparation
Vanilla Ice Cream
Step 1
In a large bowl, whisk together the sweetened condensed milk, heavy cream, whole milk, vanilla extract, and salt until fully combined.
Step 2
Cover and chill the mixture in the fridge for 1-2 hours.
Step 3
Pour the chilled base into your ice cream machine and churn according to the manufacturer’s instructions (usually 25-30 minutes).
Step 4
Serve immediately for soft serve texture or transfer to a container and freeze for 4 hours or until firm.
Mint Chip Ice Cream
Step 1
Whisk together sweetened condensed milk, heavy cream, whole milk, peppermint extract, and salt until smooth.
Step 2
Chill the mixture in the fridge for at least 2–4 hours.
Step 3
Pour the chilled base into your ice cream machine and churn according to the manufacturer’s instructions (usually 25-30 minutes).
Step 4
10 minutes before the end of your churning time, melt your chocolate chips in the microwave at 20 second incriments until melted. In the last 5 minutes of churning, drizzle in melted chocolate.
Or you can just add full chocolate chips instead of melting them.
Step 5
Serve immediately for soft serve texture or transfer to a container and freeze for 4 hours or until firm.
S'more Ice Cream
Step 1
Make vanilla base as listed above.
Step 2
10 minutes before the end of your churning time, melt your chocolate chips in the microwave at 20 second incriments until melted. In the last 5 minutes of churning, drizzle in melted chocolate.
Or you can just add full chocolate chips instead of melting them.
Step 3
In your desired container, layer ice cream, crushed graham crackers, and marshmallows, and give a gentle stir as you go. This will ensure you incorporate everything without the graham crackers getting soggy.
Step 4
Freeze for at least 4 hours before serving.
